The Perfect Tuscan Radicchio​ Salad

Making More Salads with Radicchio

With spring approaching I am ready to start incorporating more colorful salads into my diet. I am always more motivated to make a salad when I can buy fresh greens from the farmer’s market. But when I saw this beautiful head of organic radicchio at Whole Foods I immediately wanted to create something fresh and delicious. Whenever I go to the grocery store or the farmers market I like to look at all the produce that is available and buy what looks fresh. What really makes grocery shopping fun for me is finding something new I haven’t tried before. I have never bought radicchio before. Yes, I have had it in a salad mix. But never have I created something delicious before.

Health Benefits

Radicchio is an extremely healthy vegetable from the chicory family, not to be confused with cabbage. It is a bitter vegetable but the more bitter it is the healthier it is for you. If you aren’t used to the flavor it is best to balance the flavor with less intense greens and cut it into small pieces. Or cook it for the bitter taste to soften and sweeten. Radicchio is a rich source of vitamin K and it is high in minerals like zinc and copper.

Tuscan Radicchio Salad

1/2 head of Radicchio

1/2 head of Bibb Lettuce

1/2 bunch of Kale

Topped with:

Avocado

Chickpeas

Daikon radish

Quinoa

Red onion

Cucumber

Mint

sunflower seeds/hemp seeds

Salt and pepper

Jalapeno Citrus Vinaigrette

Citrus of your choice (I used grapefruit, lemon, and blood orange

olive oil

Apple cider vinegar

Diced up jalapeño
